Corn Curl

This product is usually supplied to the market with cheese flavor. Corn grits and water are puffed up in a machine called extruder and after having passed the drier, are coated with a mixture of vegetable oil, cheese powder or other permitted flavorings, permitted edible dyes and salt. Corn grit should be chosen carefully so that it creates a uniform and appropriate texture and creates pleasant feeling when the product is being eaten. Corn grits must have a proper degree of moisture. Such corn grits with moisture content of 6-10% is placed in the tank and water is gradually sprayed on, and is mixed with it, while it is being shaken. Should water be poured on corn grits directly, the result will be accumulation of corn grits particles and a heterogeneous texture of Pofak. Wet corn grit must pass through the extruder immediately. In case wet corn grit is left, water absorption of grits rises, and as a result, grit would not be extruded well. After having mixed water with corn grits, the mixture is transferred to the tank located at the top of the extruder. It then puffs up and becomes gelatinized, as it passes the extruder, being affected by moisture, heat and pressure. The flavorless white corn curl (Pofak) exiting the extruder, then passes through a drier of 150-160º C, where its moisture content decreases. The product is then coated with a mixture of oil, cheese powder or other flavorings and salt and is packed in desired sizes.
Pam Pellet
Pellet is a semi-prepared product imported to factory in raw form, and is only roasted in oil and flavored with various essences in the factory. Ingredients of pellet are as follows:
Wheat flour, corn flour, rice flour, potato farina, corn, picked potato, picked wheat, salt, sugar, purified vegetable oils, edible resins, and natural dyes.
Oil absorption rate of sample pellets ranges from 27 to 36% (based on the type of raw materials used).The temperature required for roasting is 180-220º C and roasting time ranges from 17 to 30 seconds, depending on the ingredients. Roasted pellet are then packaged in metalized envelops. They are best be consumed within 6 months of production. It should be noted that pellets are not suitable for persons with high blood pressure, for not only they themselves contain salt, but also the flavors added to them also are salty. Furthermore, as pellet absorb oil at the rate of about 30%, people suffering from lipaemia are advised not to consume it.
